

Shawn Paul grew up in central Maine and studied Classics, Philosophy and French at Clark University in Worcester, MA. His enthusiasm for wine began during an academic year at the Université de Bourgogne in Dijon. Travels throughout Burgundy and the rest of France fueled his passion for French wines and drove him to learn more about the world of food and wine.
After years as a server in Manhattan restaurants, his career in wine started at Alto, where he worked as an assistant sommelier. In 2006 Shawn helped open Restaurant Gordon Ramsay at The London NYC, which earned two Michelin Stars. He was soon named The London’s wine director, responsible for two restaurants and a staff of six sommeliers.
In 2009 Shawn moved to Corton, where he currently oversees a list highlighting the diverse wines of France and the Corton Grand Cru. He is thrilled to be working with Drew Nieporent’s Myriad Restaurant Group in a space so rich in history.
Shawn is a member of the Guild of Sommeliers and the American Sommelier Association, and has achieved the level of Certified Sommelier from the Court of Master Sommeliers.
